Yes, on the trams without a conductor, you can buy a ticket from the driver. A 1 hour ticket (for eur2,70) or possibly a 24 hour ticket... I think they sell them, but for anything more (e.g. 3 day ticket), I think you would go to the GVB office across from centraal station (the place you waited 20 minutes... that place sucks). Even on the trams with a conductor, you'll still often see the driver selling tickets to tourists who boarded at the front door, which of course holds things up a bit.
If you buy an anonymous OV chipkaart at the aforementioned GVB office, it's good for a few years (mine is valid until 2017) and can be recharged in these little machines you'll find in shops (if you have a Dutch bank account), or they have machines in centraal station that take cash with a 20 euro note being the highest denomination you can insert. The ones in centraal station, interspersed between the NS ticket machines down this long hallway, might actually sell the cards too, but I'm not sure on that. They look different from the NS ticket machines... not sure how to describe them, a bit smaller and with a different setup. I think the card itself costs something like 5 euros (I can't remember) so initially you're paying more, but the trips are cheaper with the OV chipkaart. I'll ride the tram about 14 stops to get to the centre and that costs something like 1,50, whereas a one hour ticket runs you 2,70 and, realistically, is only going to be used for one trip. So I think in most cases, you're going to be paying about double when you buy the tickets each time rather than using a chipkaart. You can also recharge the chipkaart at the GVB place where you wait 20 minutes... they have a machine in there, or an agent will do it for you, 50 cent surcharge for them to do it.

I don't know about waffles but for pancakes, I've heard good things about the
Pancake Bakery on the Prinsengracht. Never been there. There's also Eetcafe Bredero (next to Rock Planet on Oudezijds Voorburgwal, near intersection with Damstraat) which has pancakes... they're not bad. The "Wafel & Co" places around the RLD aren't so good... you'll see them take an already made waffle and put it back in the iron to warm it up a bit before serving it to you. The consistency is spongy and not what I'd expect from a proper waffle.
