You could try Park 118. The girls come down to meet you, and you chose the one you like, but they typically only have 5-6 girls working at a time, and not all of them will be into threesomes. You might not get many choices. Cost would be 100-200 Euros, depending on length of time and size of room.
There aren't many brothels like that left in Amsterdam. For a large selection of girls, you almost have to go to Den Haag or Germany.
